The other day I made these delicious mozzarella sticks. I tried making these a year ago, when I first started cooking Gluten-Free, but it was a complete fail. Took a lot of time, and in the end had no flavor & most of them were burnt, lol! I haven't attempted to make them again until now. I have been cooking gluten free now for over a year, and have had to learn a whole new way of cooking. I have a pretty good handle on cooking this way (finally) & so I figured I would give these mozzarella sticks another shot. I am so glad I did. They are so yummy, & dare I say just as good if not better than any restaurant?

Here is what you will need. 
  1.  2 Cups of Gluten Free bread crumbs. (my favorite gf brand to use is "Schar". I have tried other bread crumbs and this one is by far the best in my opinion.) I buy these from Hy-Vee. 
  2.  Mozzarella string cheese. Each piece cut in half.
  3. 1/2 cup Gluten free flour. I like this one
  4. 1 tsp salt
  5. 1 tsp dried parsley
  6. 1 tsp black pepper
  7. 1/2 tsp onion powder
  8. 1/2 tsp garlic powder
  9. 1/2 tsp dried oregano 
  10. 1/4 tsp dried basil
  11. 3 eggs
  12. 1 1/2 TBS milk
  13. 1 cup oil for frying
  14. Marinara Sauce

DIRECTIONS :

Start heating marinara in a small saucepan.

In a bowl, place four. In a second bowl, whisk eggs & milk together. In a Third separate bowl combine the bread crumbs and all of the spices and herbs. 

Coat each piece of cheese in flour. Then dip it in the egg mixture. Then roll and coat in the bread crumbs. 

Dip in the egg & bread crumbs a second time. Make sure the piece of cheese is completely covered in the bread crumbs.

Set that piece aside, and continue with the rest of the cheese until you have several pieces.

Heat the oil in a pan. 
(I did like number 3-4 on my burner. You don't want it too hot, you want a slow cook so that the cheese is able to melt without the outside burning. You also want to be able to hear the "sizzle" when you set the pieces of cheese inside, that's when you know it's hot enough).

Once you have several pieces of cheese prepped and ready to put in oil, go ahead and start placing them. Remember the order you place them in, so you can flip and turn them evenly. I cook them about 45 seconds to a minute on each side.. Just watch them, it's better to turn them too soon, than to turn them too late and burn them. No Bueno. 

Once they are all evenly cooked and cheese starts melting, take them out and set them onto paper towels to absorb the excess oil.

 Leftover mozzarella sticks can be frozen and heated up later in the oven, which works very well :)

Here is a little video of how our day normally runs, start to finish. I try to do one of these once or twice a year, but haven't done one in 2 years! Which makes me so sad, because watching the last one I did, they girls have grown SO MUCH since then! So I definitely need to try to carve time out to make this happen ever 6 months to a year. It is so much fun to watch back as a family.

Kids grow up way to fast, and before you know it they are almost as tall as you.

I will always cherish and love watching these.

London - the more I watch you grow, the more I pray for patience. The more I pray for patience, the more I realize, I think, your kinda, just like me. 


I remember being little, & my mom Pastor Vicki Braucht would always tell me “Tarah, do not touch that, it’s hot!” I always remember it being a cookie sheet out of the oven, or a pot on the stove... well guess what? My mom would turn her back for 1second, I would see her turn, & I would immediately touch that cookie sheet as fast as I could without getting burnt. EVERY TIME. Well what do ya know, London does the same thing. Y.I.P.P.Y.- we were in Costco yesterday. I was picking up one of the rotisserie chickens, that always sits on the hot metal that says “Caution! Hot!” ... While I’m getting a bag to put the chicken in, I tell London “ Do not touch that London, it’s hot! DO NOT touch it.” I turn to get a bag, keeping my eye on her, because let’s be real, I know she’s just like me… And what does she do? Yep. she touches it. I go to scold her & I hear a little voice saying “ & who does this little cutie remind YOU of?” 

Isn’t that funny, that a distinct memory that you have of yourself as a child… Your own child also does? 

To this day, Adam gets freaked out when I pick things up straight from a cookie sheet, or right out of the toaster, without flinching or getting burnt. I guess it’s a cool trait to have. *wink*

I have two “mini me’s” one is a perfect little angel who wants to always follow rules. One is a complete rule pusher.  

Me.... well, I of course am both........

I got this recipe from my sister in law, Amanda. I will be forever  grateful 🙌

1 can Black Beans (drain & rinse)
1 can Corn (drain & rinse)
2/3 Cup Chopped Cilantro 
2/3 Cup Green Onion
1 Cup chopped Tomato
2 Cups Cut up Avocado


Dressing:
1/4 C ( I do a little less of that actually, maybe about half) Olive Oil.
1/4 C Red Wine Vinegar
1/4 Cumin (I do a little more)
3/4 tsp Salt (more to taste)

Squeeze 1/2 a lime on top (optional)

Eat it with chips like I do, or as a salad like my little London does, she just eats huge spoonfulls 😆
Either way, its sure to be a hit with everyone! 



I like to buy organic Cilantro, Green Onion, & Tomato. Makes it even healthier 😉
For a larger batch, like I always do, just double everything.

The kids have basically taken over the whole house. But, here is our actual "Playroom". 
Adam & I recently tackled the huge entertainment center & painted it a fresh clean white. 
We put this off for years, cause it was so daunting.
But, we did it and I am so happy we did.
Fresh paint.
New glass in the cupboards.
Hardware put on.
Labels on all of the different baskets.
So much better looking.
To top it all off, a pink couch for their playroom.
I officially love it, although, I do need to finish the empty space above their princess dresses. 
But thats a little task.
